The agreement comes during a record-breaking year for the Brand in both new restaurant openings and development commitments. So far, eight restaurants have opened in 2023 with another 10-12 under development for openings through year-end. Year-to-date, Eggs Up Grill has signed on 10 different groups of franchise partners, adding more than 30 restaurants to its rapidly increasing development pipeline. Schmidt plans to open the first of his locations in early 2024.

Schmidt has spent the last five years as senior director of information security for Denny’s.  He began researching franchise opportunities to open in Melbourne, Fla – he and his wife are alumni of Florida Tech – after they returned to the coastal area in 2000. Their goal was to eventually open and scale a business that could help integrate them back into the community they love.
